For my father's birthday, my cousin and I took him to a butchery class at Ginger Pig in London (Marylebone). I couldn't recommend the experience highly enough. We were taught how to butcher deer and rabbit, and they served us probably the best steak I've ever eaten (60 day aged rib of beef).
